Grown on beautiful coastal soils, rich in sand and marine fossils that impart a moreish salinity, these grapes are hand–harvested and fermented with native yeasts before being aged; partly in stainless–steel tanks to retain their coastal vivacity, and partly in large old barrels to develop texture.
