The undulating hills of Bergerac lie just to the east of Bordeaux and boast the same heady blend of red grapes. Leading the charge here is Merlot, with just a touch of Cabernet Franc. The grapes are fermented in steel before being moved to subterranean concrete tanks to age for a year. The concrete acts like a barrel, allowing the wine to breath and mature.
